Sweet n sour pakodis

Ingredients
Besan 1/2cup
Salt to taste
Soda 1/4tsp
Add water and make batter
Fry pakodis in hot oil and dip in cold water
Tamarind pulp 1/4 cup
Salt 1tsp
Sugar 1/2cup
Chilli powder
Black salt 1/2tsp
Hing 1/4tsp
Roasted jeera1tsp
Mix them well till sugar dissolves add 3cups of water and mix
Now squeeze water and add pakodis in this tamarind water and serve cold

Rainbow sushi

Ingredients

Sushi rice 1cup
Rice vinegar 1/4cup
1tsp salt
1tbls sugar
Cucumber 1cut length wise
Carrot 1 cut length wise
Asparagus 5sticks
Mayonnaise 6tbls
Soya sauce 
Wasabi
Pickled ginger
Nouri sheets 5
Mat to fold sushi
Method
Wash rice add 2cups of water cook when starts boiling simmer the flame and cook for 15minutes or till done.
Mix vinegar,salt and sugar micro for 30seconds and mix in rice and allow rice to cool.
Divide rice in 5parts and put 4parts in ziplocks add red colour in one part blue in second green in third and yellow in fourthnow press with fingers and colour the rice . Cook asparagus in 1tsp oil when brown add little salt and remove from heat.
Spread mat and keep nouri sheet an it smooth side should be out now spread a line of red rice then blue then white then yellow with were hands and press it lightly now spread a line of mayonnaise keep asparagus cucumber and carrot hold gently and roll it while pressing when fully rolled cut into 6-7roundles cone them with mayonnaise serve with soya sauce ,pickled ginger and wasabi.

sail in pasta

SAIL IN  PASTA
ingredients
Pasta                   2 cups
Coconut  milk     3 cups
Lemon grass       2 sticks chopped
Galangal               1 thumb size
Salt                        2 tbls +as required
Chicken                100 gm bite size pieces
Fish sauce          1 tbls
Thai  red chilli     1 or 2
lemon juice         1 tbls
Dry red chillies    3 or 4 soaked in warm water
Garlic cloves       3 or 4
Pepper corns      1/4th tsp
Cumin seeds       1 tsp
Corriender seeds 1 tsp
Onion                     1 chopped
Olive oil                 4 tbls











Basil leaves         8 to 10
Lemon zest        1 tbls
red .yellow green bell pepper 2-2tbls each cut into triangular pieces
Baby corn            2 cut diagnaly
brocoli                3-4 florets cut length wise
 To garnish
1 big oval potato
Tomato slice
Tooth pick
Method
Boil enough water in a big pan add 2 tbls of salt when it starts boiling add 2 cups pasta stir in between boil for about 7-8minutes check if done drain the water it should be slightly under cooked.
Heat a wok add 2 cups of coconut milk half  of galangal and half of lemon grass cook on low flame for 3-4minutes add chicken pieces cook till done add 1 1/2 cup boiled pasta stir well  add thai red chillies 1 tbls.fish sauce and 1 tbls lemon juice can add lemon leaves also.keep aside
Make paste of soaked dry red chillies.garlic.onion.rest of galangal rest of lemon grass little salt and some water and grind in a fine paste
Heat oil in a wok add the paste sauté for 4_5minutes add all vegetables and add some pasta water add red chilli powder and boiled leftover pasta mix well add coconut milk lemon zest and lemon juice.mix well.
Boil the potato peel and cut into 2 pieces scoop out the inner portion to make it hollow
now deep fry till golden .take a slice of tomato and fix it on fried potato with the help of tooth pick to make a boat fill the boat with pasta
For plating first fill white pasta in a bowl and keep it upside down in the centre of a plate now keep red pasta around the bowl then remove the Bowl this way we will have the white pasta in the centre and the red one around it now keep the prepared boat on top of white pasta .

Any time rolls

Ingredients
Bread slice                 2
Capsicum                   1 small finely chopped
Onion                           1 small finely chopped
Green chilli                  1 finely chopped
Salt                                to taste
Curd                              2 tbls
Maida                            2 tbls
Oil                                  to fry
Method
Mix all the ingredients except oil adjust maida for required consistency to make rolls .now heat oil in a kadahi and fry prepared rolls in medium hot oil till golden serve with chutney or tomato sauce.can use be San also instead of msida. 

hope I could hug my dad

Every one is attached to there mom and dad but daughters are specially more attached to their dad's so am I. When I was just 6-7years old I use to study in hostel and I was sick every one from the hostel went to see Mela  (fare)but I couldn't go as I was not well next day my dad came to pick me from the hostel he knew that I couldn't go to mela because of my illness before going back to home he took me to mela  showed me whole mela carrying me in his arms then he took me home.i was so happy although I was not well at that time I could not hug him for his gesture but now I really want to hug him  but now it's too late because he is sitting in heaven and may be watching me............years have past he is not with us but it seems it's just a day or so when he was with us on this fathers day I want to give him a tight hug ....He is  in our hearts and his blessings are with us too.when you go through your memory lane you can see so many incidents when you are touched once we were coming back from a wedding by train it was the month of December instead of wearing so many woollen clothes I was shivering when my dad saw me  he just took out his jacket and wrapped me in it I felt cosy but he was standing  only in a half sleeve sweater.at that time I was 9 years old but still that memory is so fresh in my mind I want to give him a big hug ..but from years I am waiting for him to come but he has gone to such a place from where no one comes back ......no one can take your dad's place in your life my dad always taught me how to lead a simple life but with high thinking he fulfilled all my dreams when I got married it was the first and the last time when I saw tears in his eyes....at that moment I could understand  how much he loved me  I selute hin and just want to give him a tight hug.....

Mango flamengo

Ingredients
Mango juice              1/2 glass
Khan syrup                3-4 tbls
Soda                           as re guided
Lemon juice              1 tbls
strrer
Mint leaves                to garnish
Method
Take a long glass pour the khan syrup in it now tilt the glass and pour mango juice along the side of the glass now slowly straighten the glass you will see tow layers green and orange now add soda and lemon juice slowly should not disturb the layers now garnish with mint leaves and lemon slice...
